- Place chunks of seedless watermelon into blender and process until you achieve a liquid state. You will have small chunks throughout do not discard!
- Combine watermelon juice, mint syrup, lime juice, and rum in a container and mix well. Fill popsicle molds 3/4 full with juice mixture and top off with the club soda and a pinch of both lime zest and mint stir to combine.
- Freeze for about 2 hours or until mixture is solid enough to slick in popsicle stick straight up . Insert popsicle sticks and finish freezing popsicles.
